Saté kebabs with peanut sauce

Popular with all and sundry.

For 4–6 people

For the kebabs:
4 chicken breast fillets (about 160 g/5 ½ oz each)
2 cloves garlic
1 small onion
1 red chilli pepper
1 large pinch cumin
2 tbsp light soy sauce
500 ml/17 fl oz (2 ¼ cups) coconut milk
2 tbsp cooking oil
salt
pepper from the mill

For the peanut sauce:
1 small packet (100 g/3 ½ oz) salted peanuts
1 lemon (untreated, unwaxed)
2 tbsp peanut butter
1 tsp curry powder
1 pinch sugar
3–5 tbsp cream

In addition:
8–10 sticks lemon grass

Preparation time: 40 minutes (excluding marinating time)

1. Rinse the chicken fillets under cold water, wipe dry and cut into short strips 1,25–2 cm/1/2–3/4 in wide. Peel the garlics and onion and chop as finely as possible. Wash the chilli, cut in half lengthways, remove the stalks and seeds and cut into thin strips.
2. Mix together the garlic, onion, chilli, cumin, soy sauce, 4 tablespoons coconut milk and the oil and stir to incorporate all the ingredients. Season with salt and pepper. Leave the strips of chicken breasts to marinate für 1–2 hours.
3. Meanwhile roast the peanuts in a pan without fat, leave to cool and chop finely or crush. Wash the lemon in hot water, wipe dry and grate the rind. Squeeze the rest of the lemon. Add the remaining coconut mild, peanut butter und curry powder to the pan and bring to the boil. Stir in the crushed or chopped peanuts, grated lemon zest and lemon juice, a pinch of sugar and enough cream to make it deliciously creamy.
4. Allow the pieces of meat to drain briefly and thread onto the stems of lemon grass in a wave-like shape. You can cut off the thick end of the lemon grass and freeze to use another time. Place the kebabs a little distance from each other unter the preheated grill, brushing them with the marinade now and again. No grill? No problem, just fry the kebabs in a pan in a little oil. Serve with the peanut sauce.

Something else? You can also make these saté kebabs with strips of pork fillet or beef fillet. But in that case it is best to make the holes in the meat first with a wooden skewer. And you can also use wooden skewers instead of lemon grass.
